Thanksgiving meals [Nov. 27th, 2008|11:46 am]
Doug Ayen
breakfast

Eggs Benedict with "dirty" sauce Bearnaise and locally raised Canadian bacon
(Dirty sauce Bearnaise is where you leave your finely diced shallots, tarragon, and other chunky bits in the vinegar reduction instead of straining them out. It gives a bit of texture to the final result, and the shallot bits become tender bursts of flavor and sourness with each bite. Ugly, though -- a greyish yellow with black specs and lumpy bits.)

jasmine green tea

Dinner:
Sourdough rolls (new culture, using local bacteria boosted by commercial yeast)
smoked turkey breast au jus
smoked mashed potatoes
white asparagus with leftover "dirty" sauce Bearnaise (you cannot immagine the willpower it took to not use it up on some of the sourdough rolls when they just came out of the oven)
Spiced Apple Sorbet

Apple whiskey sour
